Stir fry Brinjal

I got this receipe from my cousin. She made it for lunch along with rice and sambar. It is quick and easy to make.
                      

Ingredients:
eggplant/brinjal - 5 cut into cubes
onion - 1 medium cut  into half and then cut lengthwise
ginger - 1 inch finely chopped
garlic - 2 cloves finely chopped
green chilly - 1 cut lengthwise
chilly powder - 1tsp( according to your spice level)
turmeric powder - 1/2 tsp
corriander powder - 1tsp
garam masala - 1/2tsp
curry leaves - 1 sprig
tomato - 1 cut into cubes
salt to taste
oil - 2 tbsp

Directions:
 Marinate cubed pieces of eggplant with the masala powders and salt to taste and leave on the kitchen
counter for 30 min .
Heat oil in a pan and saute onion until they turn transparent and then add green chillies ,ginger,garlic  and curry leaves and  cook until they are soft.At this stage add the marinated eggplant ; sprinkle 2- 3 tsp of water to the vessel and take off all the leftover marinade and pour to the pan; cook  covered for around 20 min on medium heat  or  until the eggplants are done and soft. Add the chopped  tomatoes and stir well till you get a roasted texture. Turn off the heat and serve warm .
