Vishu special - Pal payasam(Rice -milk pudding)

 
Vishu for every Malayalee is so special. The day starts with "Vishu kanni" and "vishu kaineettam", also the fireworks. The ladies in the house start cooking the big feast with rice and almost 15 different curries and 3-4 sweets as dessert.

Pal payasam(Quick method)

Ingredients:
Basmathi rice-a handful(I used Nirapara broken matta rice from Indian store)
Milk - 4 cups
Sugar -1 cup
Cardamom, crushed -2 pods(optional)

Directions:

  1. Take a handful of basmathi rice and just crush into two in a mixer grinder.
  2. Wash the rice in water for 2-3 times and soak the rice in water for 10 minutes. Drain and keep aside.
  3. Mean while add milk and sugar into a pressure cooker and keep it on the stovetop and allow the milk to  warm, now add the drained rice to the cooker and close the lid.
  4. Keep on high flame, when the whitsle is about to blow lower the flame to minimum and keep on low flame for 45 minutes.
  5. Switch off the flame and open the lid after 30 minutes. 
  6. You can see a pink shade in the pudding.
  7. Add crushed cardamom and allow to boil.Remove from stove.Optionally cashew nuts and raisins  toasted in ghee can be added
