Chicken curry

Chicken is a weakens of very non-vegetarian.When I was a kid, Sunday we usually have chicken for lunch.Its always a side dish  for us at home.


Chicken curry:
Ingredients:
  • Chicken - 1 whole chicken skin out and cut into small pieces
  • onion - 1 large sliced lengthwise
  • tomato - 2 cut into four
  • ginger - 1 inch piece chopped
  • garlic - 5- 6 cloves chopped
  • green chilly - 2 or 3
  • corriander powder/malli podi - 3 tsp
  • turmeric powder - 1/2 tsp
  • redchilly powder - 1tsp
  • tomato paste - 1/4 - 1/2 cup
  • onion - 1 medium chopped
  •  juice of half lemon
  • salt to taste
 Directions:
  • Clean the chicken well under running water  4- 5 times .Clean adding turmeric ,salt and lemon juice, also marinate the chicken with salt,turmeric,1tsp of corrinader powder,1/2 tsp of chilly powder and lemon juice.Leave it on the kitchen counter / fridge for  30- 45 min.
  • Heat oil in a heavy bottom pan add ginger ,garlic and green chilly fry for a min or two . Add sliced onion and cook till translucent. Add rest of masala powders and fry for another 2-3 mins  or till the raw smell goes away. Add the chopped tomatoes and stir and allow the tomatoes to become little mushy.At this point add tomato paste and stir for a min .Add the chicken and stir well with a spatula  and cook covered till chicken is done.
  • Do a quick "taste test " and adjust the salt. Allow the curry to boil for sometime.(If you feel the curry is little sweet add 2- 3 green chillies slit into two and allow to boil.)
  • In the meantime, in a small pan heat oil, add the chopped onion and fry till brown .Add the curry leaves and pour this to the curry .Remove from heat.Let it rest  30- 45 min before serving as it takes time for all the masalas to blend well. 
  • Serve with warm rice, chappathi or  dosa
