Carrot Upperry /Carrot Thoran
Ingredients:
carrot diced into cubes - 2 cups
grated coconut - 1/4 cup
turmeric powder - 1/4 tsp
chilly powder - 1/2 tsp
salt to taste
Directions:
Heat a saucepan adding carrot ,water and salt to taste. Cook covered till down on low mediun flame.
In another pan add grated coconut and stir for a minute .When coconut changes it color slightly ,add turmeric and chilly powder and fry till the raw smell goes away.Add the toasted coconut mixture to the cooked carrot and mix well with spatula ,till the it becomes dry.
Note:
I omitted seasoning, but you can season with mustard seeds and curry leaves in 1teaspoon of oil and then add the grated coconut.
