Ingredients:
· 2 eggs
· 2 cups all-purpose flour
· 1 ¾ cup milk
· ½ cup vegetable oil or oil of your choice
· 1 tablespoon white sugar
· 4 teaspoon baking powder
· ¼ teaspoon salt
· ½ teaspoon vanilla extract
· 2-3 drops of red food color
Directions:
· Beat eggs in large bowl with hand
beater until fluffy. Beat the flour, milk, vegetable oil, sugar, baking powder,
salt and vanilla, just until smooth.
· Then divide the batter evenly into two medium –size bowl. Set one bowl
aside.
· Gently stir red food coloring into the second bowl until the batter turns
a deep pink color.
· Prepare a flattop griddle or pan; pancake turns out better when cooked on
a flat surface. Rub the pan with little bit of oil; using butter may scorch and
could affect the look of the pancakes.
· Set the griddle over the stove top. Sprinkle few drops of water in the
center; if the bubbles skitter around the pan, it is ready for cooking.
· Make equal number of regular and dark pink pancakes using the batter in
the two bowls.
· When the pancakes are finished, place them on a wire cooling rack or a
sheet of foil for two minutes. Then, transfer to a clean cutting board.
· Cut a heart out of the center of each pancake using a heart cookie
cutter.
· Place a red mini- pancake heart in the center of a white pancake and a
white mini-pancake in the center of each red pancake.
· Serve with maple syrup or any other syrup of your choice.
