Potato Bonda

The climate is getting worse.Its getting cold and rainy sometimes.I always feel to have hot snacks in  the evening when I see outside through my window.Its really good having hot bonda with a cup of coffee/tea.




Ingredients:
  • potatoes - 3 medium
  • green chillies - 2- 3 chopped (or more according to your spice level)
  • onions - 1 medium chopped
  • mustard seeds - 1/2 tsp
  • cumin seeds/jeera - 1/2 tsp
  • curry leaves - 3-4 leaves chopped
  • corriander leaves chopped - 1tsp
  • hing/kayam /asetofedia - 1/4 tsp
  • turmeric powder- 1/4 tsp
  • juice of half lemon
  • salt to taste
  • oil - 3 tsp
For Batter:
  • Besan /Kadala podi - 1/2 cup
  • ajwain - 1/4 tsp
  • baking soda- 1/4 tsp (optional)
  • chilly powder - 1/4 tsp
  • water - as needed
 Directions:
  • Boil potatoes, peel the skin and mash them with hand slightly, so that it has some pieces of potatoes in it .That should be the texture of mashed potatoes.
  • Heat oil in a pan  add mustard seeds,when the mustard seeds crackle,add cumin seeds .Now add the chopped ginger,green chillies,curry leaves and corriander leaves.
  • Add turmeric powder and immediately add chopped onions and sprinkle some hing for flavor and stir till onions are translucent ,Now add salt and mashed potatoes .Use the spatula and mix everything very well and add little lemon juice . Remove from heat and keep aside .
  • Make batter adding all the ingredients in  batter section. The consistency should be thicker than pancake mix.
  • When the potato mixture cools down make lemon sized balls with it and keep it in  a plate.    
  • Dip the potato dumplings in the batter and deep fry in oil.
  • Serve warm with a cup of hot tea or coffee.
