Pal payasam(Quick method)
Ingredients:
Basmathi rice-a handful(I used Nirapara broken matta rice from Indian store)
Milk - 4 cups
Sugar -1 cup
Cardamom, crushed -2 pods(optional)
Directions:
- Take a handful of basmathi rice and just crush into two in a mixer grinder.
- Wash the rice in water for 2-3 times and soak the rice in water for 10 minutes. Drain and keep aside.
- Mean while add milk and sugar into a pressure cooker and keep it on the stovetop and allow the milk to warm, now add the drained rice to the cooker and close the lid.
- Keep on high flame, when the whitsle is about to blow lower the flame to minimum and keep on low flame for 45 minutes.
- Switch off the flame and open the lid after 30 minutes.
- You can see a pink shade in the pudding.
- Add crushed cardamom and allow to boil.Remove from stove.Optionally cashew nuts and raisins toasted in ghee can be added
