Carrot Halwa

Carrot Halwa, the most common dessert made  in each n every house in India. The end result is really yum!!!! These days Carrot Halwa is served with a scoop of vanilla icecream and you will really luv to have it .  


Ingredients:
Carrots  - 10 ,grated finely
sugar - 1 1/2 cup
milk - 1 cup
Ghee/ Butter - 1 stick ( you can reduce the amount  if you are very much health conscious)

For Garnishing:
Raisins and cashews- 1/4 cup each
Butter - 3 tbsp

Directions:
  1. Grate the carrots and keep aside .
  2. Heat a wide pan on stove, add the grated carrots into it along with 1 cup of water. Cook  covered till done. This takes 5- 10 minuted.
  3. Add 1 cup of sugar to the carrot and keep stirring evry 2- 3 minutes.
  4. When all the milk in the pan almost drains and the carrot consistency become little thick add 1 stick butter and keep on stirring till the mixture  leaves from the pan .Remember to keep the pan on a medium low flame.
  5. Once done,transfer the halwa to a bowl or plate
         
  For garnishing

  Fried raisins and cashews:

Heat 3 tbspn of ghee in a pan.Fry 1/2 cups of raisins , preferably golden, stirring continuously until they turn plump or look like golden grapes and keep them aside.
Fry 1/2 cups of cashews in the same ghee , till golden brown and keep aside.

Garnish the halwa in the bowl with fried raisins and cashews.
Serve warm or chill.

Note: You  can have the carrot halwa as such  or with a scoop of Vanilla icecream. Its served like this in "Ideals Ice creams "  at Mangalore, India.
