Spinach Pulav

I  have heard from lot of people about spinach pulav ,but gave a try though. And today at last I made it and have to say it was really yummy and easy to prepare.You can watch the video over here .

Spinach Pulav
(Sanjeev Kapoor's receipe)

Ingredient
onion - 1 medium sliced lengthwise
garlic - 4  chopped finely
jeera - 1 tsp
butter - 2 tsp
rice- 2 cups
salt to taste
water - 3 cups
spinach - 1 cup

Method
Soak rice for  20 - 30 minutes.
In the meantime, cut onion lengthwise  and chop the garlic.
Bring water to boiling in a saucepan. Add the chopped spinach  and allow to cook for 1- 2 min.Drain  the water and allow the spinach to cool. Save the water for cooking the rice. Grind  spinach into paste.
Heat butter in a heavy bottom pan .Add a tsp of jeera when the jeera splutter add chopped garlic and  onion and fry till the onion become translucent . Add 1/2 tsp of  salt to the onion Add the grinded spinach paste and  stir well.Now  add the drained rice and  stir  well. Now add the water used to cook the spinach plus extra as needed. (1 cup rice =11/2 cup of water) Cook uncovered on high heat for 3-4  min stiring now and then until the water diminishes.Add salt to taste.
Once you see no water in the rice  take a kitchen towel/napkin and keep it over the pan and put on the lid and keep on low flame for 5 min . Switch off the gas and open the lid after
15-20 minutes.
Serve hot with pickle/achar  and raita of your choice.
